Cassia

Cassia is a warm, sweet spice closely related to cinnamon but with a bolder, more assertive character. Also known as Chinese cinnamon, cassia comes from the bark of the cinnamomum cassia tree and has a richer, more intense aroma than true Ceylon cinnamon.
